Bodegas Navarrsotillo, Navarra Garnacha Blanca Gaupasa (2021)
In the Basque language, Gaupasa translates to “going out all night until daybreak”. What better wine to bring along with you when you paint the town red than these?
Method: Certified Demeter Biodynamic, Organic, Vegan. Hand-harvested Garnacha Blanca is sorted and destemmed before being pressed directly to tank. Native yeast fermentation for 7 days. Unfined, filtered, minimal SO2 at bottling. Pale straw in the glass with lemon citrus and, to a lesser extent, pineapple on the nose. Balanced minerality and acidity which lingers on the palate for the finish. Food Pairings: A great aperitif. Pairs well with soft cheeses, shellfish, and salads.
 
Bodegas Navarrsotillo, Navarra Garnacha Gaupasa (2021)
Certified Demeter Biodynamic, Organic, Vegan. Hand-harvested Garnacha is sorted, destemmed, and lightly crushed in stainless steel fermenters. Native yeast fermentation goes on for 6-7 days with daily pump-overs. After racking, the wine rests in stainless steel for 5-6 months before filtration and bottling with minimal SO2 addition.
Tasting Notes: Dark red fruits on the nose with secondary earthy notes of forest floor that carry over to the palate. Soft to medium tannins. Cocoa and dark fruit on the finish. Food Pairings: Roasted pork and poultry. A good red wine option for richer fish such as tuna and salmon due to its softer tannin structure.
 
Lasalde Elkartea, Txakoli White Balea (2021)
Balea is 95% Hondarrabi Zuri (white) and 5% Hondarrabi Beltza (red) vinified to 11% ABV, estate grown. Flavor Notes and Pairings: Fresh, clean, lively acidity with a pleasant spritz. Citrusy on the nose with balanced minerality and salinity, making it a fantastic pairing with seafood and cured meats. If you were to visit the winery, they’d serve it to you with Cantabrian anchovies and crusty bread.
Hondarribi Zuri and its red cousin Hondarribi Beltza are the indigenous grape varietals of the Spanish Basque coast. Since at least the 1400s, these grapes have been made into a spritzy, high-acid white wine called txakolina. Much like cider in the inland, it was the every-day drink of the coastal Basques and especially popular among fishermen who traded parts of their catch for whole foeders to take out to sea. Whalers, whose voyages tended to be the longest, naturally bought and consumed the most. Thus, whaling and txakoli production became linked over the centuries; vines dotting the green cliffs were often trestled with whale bones, while barrels of wine being hoisted onto ships could be seen in the ports below. Today, the whalers are long gone, but they are commemorated in the logo of the most prominent txakoli appellation, D.O. Getaria and in the name of this wine, BALEA, which is the Basque word for whale.
Many Basques can trace their ancestry to rural farmhouses or “baserris”. These small estates generally made a living by raising cattle for sale and subsisting off whatever else they could produce. To drink, this almost always meant cider for the inland baserris and txakoli on the coast. As the economy changed in the mid-1900s, many baserris traded in their cattle pastures for expanding their orchards and vineyards. This was the case for the neighboring Akarregi Txiki and Lasalde farms which, after generations of collaboration, formally joined houses to form Lasalde Elkartea. The txakoli they produce today bares the Akarregi Txiki name and was one of the 10 original wines to be admitted into the appellation of origin, Getariako Txakolina, of which there are now 33 member producers.

Currently, we implement a new investment program, which includes some new facilities, as well as the creation of "green" infrastructure, for energy saving and environmental protection.
