The Fableist 163 Chardonnay
100% Chardonnay grown in Edna Valley within the vineyards of Rancho Arroyo Grande-Coquinam, Morro View and Cat Canyon. This Chardonnay has soft and inviting fruit with tropical notes and wonderful balance. Ripe and round creamy fruit with wonderful texture and a lovely finish that is not oaky (but it's more than okay!). All the fruit was picked based on the acidity to preserve brightness and sent directly to the press. The wine is then fermented with native yeast. 60% fermented in barrel and the remainder in stainless steel. Notes of orange creamsicle, lime salt and white peach and fresh pineapple. Delicious.
The Fableist 774 Pinot Noir
As a winery that really wants to embrace a Burgundian expression of Pinot Noir, The Fablesit wines embrace vineyard sites with sandy soils. Bright and bold red and blue Pinot fruit is lush and smooth but has a fantastic streak of freshness that keeps the wine vibrant and balanced. Richer than a Willamette Valley Pinot Noir but resists being overly extracted as many less well-crafted CA wines. Juicy Pinot fruit in all its yummy glory. A small amount of whole cluster in the ferments to bring out savory components. This wine receives one punch down or pump over daily to intentionally keep the integrity of the fruit and for a softer extraction. It's then fermented with native yeast and aged 100% in barrel. Brown Spices and plum on the nose. The palate gives off flavors of hibiscus tea with slightly overripe strawberries and freshly cracked white pepper.
The Fablesit 373 Cabernet
This unique wine collaboration from Paso Robles is mainly Cabernet Sauvignon, with a splash of Tempranillo and Petit Verdot. This wine spends some limited time in oak barrique, 25% of which is new. The result is a full bodied yet easy drinking wine with vibrant black currant and other beautiful dark fruit notes, cedar, and fresh spice on the finish. Over delivers for the price. Rich and smooth, comforting Cabernet with silky tannins. A big mouthful of Cali Cab at an easy drinker price.
